This recipe is a winner, if I do say so myself! It’s my new favourite thing to make and eat, just for me. Using leftover cooked salmon or chicken from last night’s dinner in my previous post you can make a delicious sweet potato crust pie in about 10 minutes. I’m calling this pie my “just for me” pie.
Adjust the cooking time as necessary, as microwaves can vary in their power settings. I cook my pie for 5 minutes on medium or medium high. Check if the pie crust is coming away from the sides of the bowl slightly and the filling springs back when you touch it. If necessary, return the dish to the microwave and cook for a further 1 -2 minutes on medium.
For a gluten free version of this recipe, replace the breadcrumbs in the crust with 1 tablespoon almond meal or gluten free flour, and in the pie topping replace the breadcrumbs with a little more almond meal and some grated strong, sharp flavoured cheese.
To plan ahead for lunch for another day, cook extra sweet potato to add to a salad with a small can of mixed beans, a little mustard and some salad greens.
